Glass noodles cook very quickly. You don't even need to boil them. Simply pour boiling water over the noodles, let them sit for about five minutes, then drain in a colander.

Thaw the shrimp at room temperature (if using frozen ones). Then peel off the chitin and remove the intestinal vein from each shrimp. Wash the pepper and cut it into strips, removing the seeds beforehand. Peel the onion and slice it into half-rings. Slice the peeled garlic cloves into thin pieces.

Heat vegetable oil in a skillet and sauté garlic for a couple of minutes. Then add the vegetables and pour in water mixed with soy sauce. Bring to a boil, add the vermicelli, and simmer for another couple of minutes. Turn off the heat.

Place the lettuce leaves on a serving plate, then top them with the vermicelli, shrimp, and vegetables. Serve the remaining sauce from the skillet separately (or pour it over the dish).
