
Tilefish steak in a pan
Description
The recipe won't take much time. Snakehead meat is juicy and very tender, so it needs to be cooked properly. The best way to cook this fish is frying, as it won't fall apart or become jelly-like. This recipe for pan-fried snakehead steaks is quite simple. The most important thing is to coat the steaks well in breadcrumbs and flour, then quickly sear them over fairly high heat until a crust forms. If your snakehead steaks are thicker than 2 cm, after the crust has formed, reduce the heat and continue cooking the fish over low heat for another 2–3 minutes on each side. Never fry snakehead covered with a lid. Serve hot.

We thoroughly wash the escolar steaks and carefully dry them with paper towels. Sprinkle with salt and drizzle with lemon juice. Let marinate for 10-15 minutes.

Beat the egg with a pinch of salt. Put flour and breadcrumbs into separate bowls.

Coat the steaks well in breadcrumbs. Then dip them in egg and coat in flour.

On a well-heated skillet with vegetable oil, sear the escolar steaks on both sides until a firm golden crust forms.
