
Steak with salsa
Description
Preheat the oven to 200 degrees. Heat a 12-inch cast-iron skillet over high heat. Sear the corn in the skillet for 8–10 minutes, stirring frequently. Transfer the corn to a bowl. Reduce the heat to medium. Add butter to the skillet. Then add chopped shallot (white parts), grated garlic, 1 tsp salt, 1/2 tsp cumin, 1/2 tsp chili powder, and 1/4 tsp pepper. Cook for 4–5 minutes. Transfer the mixture from the skillet to the bowl with the corn. Mix in finely chopped tomatoes and jalapeño pepper. Season with salt and black pepper to taste. Season each steak with salt, cumin, and red pepper on all sides. Place the cast-iron skillet over high heat. Pour in and heat vegetable oil. Sear the steaks for 3 minutes per side. Place the skillet with the steaks into the preheated oven and bake until done. Arrange corn salsa salad on plates, top each with a piece of beef, then sprinkle with cilantro and green onions. Serve immediately.
