
Steak with peanut sauce and broccoli
Description
Peel the garlic and slice the ginger. Blend garlic and ginger in a blender with peanut butter, 1/4 cup soy sauce, 1/4 cup vinegar, sugar, red pepper, and 2 tablespoons of water until smooth. Place the steak in a resealable plastic bag or shallow dish, add all but 1/2 cup of the sauce, and refrigerate. Cover and keep the reserved sauce at room temperature. Cut broccoli into florets, cover, and refrigerate. Preheat the oven and place the steak on a baking sheet. Roast the steak for 8 to 10 minutes. Transfer to a large plate, loosely cover with aluminum foil, and let rest for 5 to 10 minutes. While the meat is cooking, thinly slice the onion, separating the white and green parts. Heat oil in a large skillet over medium heat. Add broccoli, white part of the onion, 1/4 cup water, and season with salt. Cover and cook, stirring occasionally, until broccoli is tender, for 8 to 10 minutes. Uncover, add the remaining soy sauce and 1 tablespoon of vinegar. Cook, stirring, until liquid evaporates, for 1 to 2 minutes. Stir in green onions. Before serving, slice the steak thinly. Serve with broccoli and peanut sauce.
