
Ribeye steak
Description
So how do you cook a pork rib steak at home? It's very simple. You will need: bone-in pork rib, shallot, cream, butter and vegetable oil, red wine, mushrooms, and dry demi-glace sauce. Note that I used dry (powdered) demi-glace, so it must first be mixed with water—about 40 ml—before being fried in the pan. Garnish the finished steak with herbs or fresh vegetables. Thoroughly rinse the steak and pat it dry, then season with salt and pepper. Let it sit for 1 hour so it can absorb the spices.

Cut the mushrooms into quarters.

In a skillet, heat the butter and vegetable oil, then add finely chopped shallot, mushrooms, and wine. When the wine has evaporated (5 minutes), add the cream.

After a minute, add the dry demi-glace sauce (previously diluted in 40 ml of water). Continuously stirring, continue cooking until thickened.

Let's go back to the steak. Sear it in a grill pan for about 5 minutes on each side. Then transfer it to a preheated oven at 180 degrees and bake for 20 minutes.

Place the cooked steak on a plate. Add the mushrooms alongside and pour the sauce over everything. If desired, garnish with fresh herbs.
