For this recipe, you will need boneless beef ribeye steak. It should be cut into four equal pieces. Wash the steaks and pat them dry with paper towels. Rub the steaks with salt, pepper, and oil. Let them marinate at room temperature for an hour and a half. Peel and slice the onion, and pick the thyme leaves.

Heat a dry skillet on the stove and sear all the pieces of meat on both sides for about one minute each, just until the beef turns golden brown.

Place the steaks on a baking rack in a preheated oven at maximum temperature. Bake for about five minutes if you want rare meat, or ten minutes for well-done beef.

While the beef is roasting, prepare the sauce. To do this, place the chopped onion into the skillet where the meat was fried, pour in the wine, and cook the sauce until it reduces by half. Add thyme, pepper, and butter. Serve the steaks topped with the sauce.
