
Old-fashioned caramel
Description
Old-fashioned caramel made with cream and corn syrup is a simple yet extremely delicious treat. These homemade sweets require constant attention during cooking, but having this dessert on the table will surely delight both your family and your friends.

1. Line a 13x9x2-inch baking pan with lightly greased aluminum foil. Set aside.

2. Mix sugar and 2 cups (0.5 liters) of cream in a large saucepan and cook over medium-low heat. Stir until the sugar dissolves, then cover briefly with a lid to melt any sugar crystals on the sides of the pan. Bring to a boil, stirring constantly.

3. Add corn syrup and cook over heat until it reaches the soft jelly stage (240°F / 115°C), or until a small amount dropped into cold water forms a ball that flattens as soon as it is removed from the water.

4. Add another 2 cups of cream; continue cooking and stirring until the mixture reaches the soft jelly stage again. Add the remaining 2 cups of cream; continue cooking and stirring until the mixture once again reaches the soft jelly stage. (Each stage takes about 20–25 minutes, but it can easily burn, so do not stop stirring.)

5. Remove from heat, add vanilla and nuts. Pour onto a prepared baking sheet. Cool completely. Invert the baking sheet; remove the foil and cut into pieces about 2.5 cm in size.

6. Wrap each one in wax paper or plastic wrap. Store in a covered container at room temperature.
