Prepare the necessary ingredients. Sift the flour, separate the yolks from the egg whites.

Dissolve the yeast in 50 ml of warm milk and leave in a warm place until a foamy layer forms on top.

Melt the butter, pour it into a glass (250 ml capacity), and let it cool slightly. Rub the egg yolks with 2 tablespoons of sugar and add to the glass. Top up with the remaining warm milk to fill the glass to the top.

Pour the mixture and the risen yeast into the sifted flour, add salt, and knead a soft dough.

Place the dough in a bowl, cover, and let it rise in a warm place for 1.5 hours. The dough should double in volume.

For the topping, chop the nuts into coarse crumbs using a blender, add 2 tbsp sugar and cinnamon, mix well.

I don't have a special base or roller for trdlo, so I used cardboard rolls from paper towels, wrapped in foil. Grease each roll with vegetable oil. Divide the risen dough into equal portions, roll each into a rope, and wrap it around the prepared forms, securing the dough ends well. Then roll the forms with the dough so that the strips join together and the dough becomes flat.

Lightly brush each piece with beaten egg white and coat with chopped nuts. Take a rectangular baking pan and place dough rolls along its edges. The trdelník should bake without the dough touching the pan, in a preheated oven at 180°C for 25–30 minutes (until golden brown). Adjust the time according to your oven.

Carefully remove the ready-made trdelík from the spit.
