Old sourdough rye bread recipe

Delicious baked goods for the whole family. Making rye bread from an old recipe isn’t all that difficult, except that bread used to be baked in wood-fired ovens, and today we do it in the oven. Otherwise, it’s all in your hands. A step-by-step recipe will help you make it, and you’ll taste real village rye bread that you definitely can’t buy in a store. Serve warm or chilled. Perfect with tea.

    Prepare the ingredients. By this point the sourdough starter should be ready; it needs to be started 10–12 hours before you begin mixing the dough. You can make the starter in the evening if you plan to mix the dough in the morning.

    10–12 hours before you begin mixing the bread dough, prepare the leaven (levain): you will need a rye starter or a piece of ripe dough, 100 ml warm water, and 100 grams rye flour.

    Mix warm water, flour, and rye starter until smooth. Cover with plastic wrap and place in a warm spot for 10–12 hours.

    After 10–12 hours, the starter is covered with numerous bubbles and develops a slightly sour taste.

    To make the sponge, mix 125 ml warm water, all of the starter, and 100 grams rye flour.

    Cover the sponge with plastic wrap and place it in a warm spot to ferment. Fermentation time depends on several factors: how active your starter is and the air temperature. In this recipe the sponge took 3 hours to mature, but it may take much longer if the room is cool.

    The sponge is ready when many bubbles have formed in it and it has increased in volume. You can proceed to kneading the dough.

    To mix the dough, pour in 100 ml of warm water, dissolve the salt in it, add all of the starter, and gradually add the mixture of rye and wheat flour.

    Knead the dough. Cover with plastic wrap and leave to ferment for 1.5–2 hours.

    Turn the proofed dough out onto a flour-dusted work surface.

    Flatten the dough into an even sheet. Fold the edge of the dough from one side toward the center, press along the fold with the edge of your palm to seal, and fix in place.

    Turn the dough over and fold the other edge toward the center. Then roll the dough into a roll and shape it into a round so it is even on all sides.

    Place the shaped bread dough into a proofing basket or into a bowl lined with a cloth dusted well with flour so the dough doesn’t stick. Cover the loaf with the ends of the cloth. Leave it like this for 1 hour.

    After an hour, preheat the oven to 250 degrees. Carefully transfer the bread to a baking sheet. The surface of the bread is covered with numerous small cracks.
