
Spring Rolls with Ground Chicken and Mushrooms
Description
A delicious appetizer for any gathering. Spring rolls are very popular in the United States — there they are served with all kinds of fillings about as often as we serve pancakes. To make them, you need almost nothing — just buy ready-made rice paper (making it yourself at home is hardly feasible). You can fill them with pretty much anything, but my favorite is this version — spring rolls with ground chicken and mushrooms. Hope you like them too ;) They can be served warm or chilled.

Step 1

Rice paper. 15 sheets. Separately, prepare warm water to dip the sheets in before making the rolls.

Rice noodles. Cook according to the instructions. Rinse well with cold water.

Any olive oil for sautéing the ingredients: ground chicken and mushrooms.

Rinse the honey mushrooms in cold water. Sauté in olive oil until cooked through. You can use any mushrooms you like.

Finely chop 3 cloves of garlic. Optionally, finely chop white or green onion. Sauté the garlic in olive oil.

Ground chicken. I needed half a package. Fry in olive oil.

Chop the carrot. I used Korean-style carrot. For spiciness.

Mix all prepared spring roll filling ingredients: ground chicken, rice noodles, carrot, mushrooms. Add salt and pepper, and a little balsamic vinegar. Soak the rice paper sheets in warm water (as directed in the instructions), fill with the prepared filling, and roll into rolls (or packets).

Serve the finished spring rolls with soy sauce and pickled ginger. If desired, you can deep-fry them. That’s tasty too!
