
Shrimp spring rolls
Description
It works both for a holiday and for everyday meals. This dish is perfect for a summer festive table, since all the ingredients are available fresh rather than frozen. I recommend using rice paper specifically—it holds the vegetables together well and gives the dish an attractive look. Of course, you can use lavash instead, but you'll need to soak it in sauce, and the dish will look quite different. The appetizer is ready. Serve immediately.

1. To prepare the rolls, cut all the vegetables into thin strips (peel the carrots first and remove the seeds from the red bell pepper).

2. Boil the shrimp if yours are not already boiled, and peel them. Cut them in half lengthwise and remove the vein if you are using large shrimp.

3. Then dip the rice paper sheet in cold water on both sides and assemble the roll: place the shrimp, lettuce leaves, julienned vegetables and mango, and cilantro on the rice paper. Then carefully roll it up.
