
Spiral-shaped pastries with cheese and tomato filling

1. Prepare the ingredients for the filling, and for the dough: flour, warm milk, salt, sugar, and fresh or dry yeast. I prefer baking with fresh yeast.

2. Dissolve sugar, salt, and yeast in warm milk (the ideal temperature is 38 degrees).

3. Sift the flour and add it to the dough in parts; you may need slightly less or slightly more flour than specified in the recipe. The dough should not be sticky, but it also should not be stiff.

4. Cover the dough with a dry towel and place it in a warm spot for about an hour; you can put it near a radiator to speed up the rising process. It took me about 35-40 minutes.

5. When you see that the dough has risen well and increased in volume, you can start preparing the filling.

6. Cut the cheese into cubes, add one or two tablespoons of olive oil and black pepper. Gently mix.

7. Add the chopped tomatoes to the cheese, and mix once again.

8. Knead the dough with your hands, shape it into a log, and roll it out on the work surface. Spread the filling on top. Use your favorite spices; I added some Provence herbs. With this amount of dough and filling, you can make several small spirals or one large one.

9. Pinch the edge well so the cheese doesn't leak out during baking.

10. Roll into a spiral. Turn seam-side down. Place on a greased baking sheet or parchment paper. Brush with vegetable oil. Bake at 180 degrees for about 30 minutes.

11. 5 minutes before baking is complete, brush the spiral with egg white. Serve the spirals hot with sauce. The sauce recipe is very simple: 3 tbsp tomato sauce, 2 tbsp sour cream, 2 tbsp mayonnaise, a pinch of ground black pepper. And it's ready!
