Description

The recipe won't take much time. Cod loins are no worse than fillets. The fish has tasty, slightly fatty meat, and most importantly, it's boneless. To prepare cod loins in an original way instead of frying them in the usual flour batter, I recommend marinating the fish in a Japanese sauce made from sake, mirin (sweet rice wine), and soy sauce. Beans, peas, salmon, and caviar are optional—you can serve them or not. Serve hot.

    Prepare all the ingredients.

    In a saucepan, mix rice wine mirin and sake. Bring to a boil and let it boil for 20 seconds. Then reduce the heat and pour in the soy sauce.

    Then add the miso paste and continue cooking over low heat until the paste dissolves.

    Then add the sugar and increase the heat to high. Constantly stir with a wooden spatula. Cook until the sugar dissolves.

    Let the finished mixture cool (about 20 minutes).

    Rinse the cod, remove any excess bones. Marinate in the cooled marinade for half an hour.

    Boil the beans and peas in boiling water.

    Then drain them in a colander and rinse under cold running water.

    Remove the peas from the pods, as well as the beans. Young beans should also be peeled from their outer skin.

    In a small saucepan, mix the milk, cream, add the pressed garlic, a pinch of salt, and black pepper. Bring to a boil.

    Preheat the oven to 230 degrees. If you have a grill mode, turn it on as well. Place the marinated cod in the oven and grill for 4 minutes (2 minutes on each side).

    Then turn off the grill function and reduce the temperature to 200 degrees. Bake the cod for another 10 minutes until cooked through. By the way, if your oven doesn't have a grill function, simply bake the cod at 200 degrees for about 20 minutes. Alternatively, you can first sear the fish in a pan and then transfer it to the oven.

    Whip the milk and sour cream mixture with garlic into a light foam in a blender before serving.

    You can serve the ready cod backs with garlic sauce, boiled beans and peas, as well as boiled quail eggs wrapped in salmon with caviar. This is just one serving option, a more festive one.
