1. Wash the asparagus and remove the tough ends.

2. Place into boiling water and cook over medium heat for just 2 minutes (for particularly thin asparagus, 1 minute is enough). Carefully remove the asparagus with a slotted spoon.

3. In a separate skillet, melt the butter. Add the sifted flour.

4. Fry the flour until golden brown. Pour in 1/2 cup of asparagus cooking water. Add salt and pepper. Mix thoroughly.
