
Spanakopita with spinach
Description
The proportions of cheese and spinach can be adjusted to your taste. Spinach can be used either fresh or frozen (you will need to evaporate the excess water from it). In a pinch, phyllo dough can be replaced with puff pastry without yeast. Can be served with tea or coffee.

Prepare all the ingredients.

Wash the spinach, chop it, then stew it until tender.

Grate the cheese or crumble it by hand. Add sour cream, Italian herbs, salt, and pepper. Mix well. Finally, add the stewed spinach.

Unfold the dough and brush each layer with vegetable oil. Place the filling on one edge.

Roll it up into a log. Wrap the remaining layers of dough the same way until the filling is used up.

Then roll the resulting rolls into a spiral. Brush with vegetable oil and sprinkle with sesame seeds. Bake for 35–40 minutes in an oven preheated to 180 degrees.
