
Spaghetti in beet sauce

1. Cook the spaghetti in salted water. Drain the spaghetti in a colander one minute before they are done, but do not discard the cooking water!

2. While the spaghetti is cooking, prepare the sauce. Finely chop the onion and sauté in olive oil until lightly golden, then add finely chopped garlic. Sauté for another minute.

3. Add the beet, cut into small pieces, to the pan and sprinkle with lemon juice. Sauté for about one to one and a half minutes.

4. Transfer everything to the blender jar, add fresh basil leaves, and blend until smooth. You can add 3-4 tablespoons of pasta cooking water.

5. Transfer the beet purée to a skillet, add salt, pepper to taste, and pour in as much water as needed to achieve the desired sauce consistency. Bring to a boil, taste, and add any additional spices you feel are missing :)
