
Spaghetti with salmon in creamy sauce
Description
The recipe won't take much time. This dish takes only 20 minutes to prepare, and you can use either fresh or smoked salmon. In the latter case, you can add a slice of finely grated green apple to the sauce instead of onion. Instead of spaghetti, you can use penne pasta. If the sauce is too thick, you can thin it with water or milk; if it's too thin, cook it a bit longer until it thickens. Serve hot.

Prepare all the necessary ingredients. Tip: for this recipe, you can use trimmings and pieces of fresh salmon that are not suitable for frying or baking.

In a small saucepan or skillet, pour 1 cup of water, bring to a boil, add salt, chicken or vegetable broth, allspice, bay leaf, squeeze the juice from half a lemon, and also place the lemon half into the water. Stir, add fish slices and simmer gently for 7–10 minutes. Then turn the fish over and cook for another 5 minutes.

Place the boiled fish on a plate, make sure there are no bones, and flake the fish meat into pieces using two forks. Optionally, remove or leave the skin.

Strain the broth in which the fish was cooked.

Heat vegetable oil in a skillet, add finely chopped onion and sauté, stirring, until translucent. Add sour cream or cream, cream cheese, and heat through, stirring vigorously to break up any lumps. Pour in the strained broth, bring to a boil, then gradually add sifted flour, stirring constantly. Add pieces of fish and frozen green peas, heat the sauce once again, and season with salt to taste.

Cook the spaghetti according to the package instructions until al dente, then drain. Mix the spaghetti with the hot sauce and serve immediately. Garnish the dish with chopped parsley and ground black pepper.
