
Spaghetti with Smoked Meats

Prepare all the ingredients. Grate the Parmesan cheese on a coarse grater, slice the salami and prosciutto into thin strips. Cook the spaghetti.

Finely chop the shallot and sauté it in olive oil.

Add white wine to the onion, reduce heat to medium. Then pour cream into the pan, bring to a boil. Let the liquid reduce by 70 percent. After that, add melted butter. Simmer shallots in the resulting sauce for several minutes (up to 10 minutes). Then strain the sauce, discard the shallots. Cover the sauce bowl with a lid and a towel to keep it warm.

Finely chop the green onion. As soon as the spaghetti is cooked, drain the water from the pot, then add the sauce, green onion, and poppy seeds to the spaghetti. Mix well. Add the smoked meats and mix again. Season with salt and pepper to taste. Before serving, sprinkle the spaghetti with smoked meats with grated Parmesan cheese.
