1. Wash the tomatoes, cut them into quarters, cover with water, and place over heat. Simmer over medium heat for half an hour. Then strain into a puree, trying to remove as many skins as possible.

2. While the tomatoes are simmering, grind the peppers, plums, and garlic through a meat grinder. Mix this mass with the spices.

3. Add this mixture to the strained tomato puree, bring to a boil once again over low heat. Pour in the vinegar, stir, and remove from heat.
