Step 1

Wash the plums and remove the pits and stems. Clean several bell peppers. Cut them conveniently. Also clean the hot chili pepper. Add chopped tomatoes.

We'll pass all these vegetables and the plum through a meat grinder. We'll get a "mottled" liquid mixture, quite an indeterminate color. Don't worry. Everything will be fixed soon.

Place the pot with the mixture over low heat and bring to a boil. Simmer for 30 minutes. Do not cover the pot with a lid; stir the mixture occasionally to prevent the bottom layers of the sauce from burning. The sauce will turn a burgundy color, reduce significantly, and decrease in volume. Now add the spices (ground coriander, black pepper, paprika, oregano, tarragon, others), vinegar, a few tablespoons of sugar, and a little salt. Press in the garlic using a garlic press. Cook for about one minute.
