Description
Minimal ingredients — excellent result. The main ingredient of this sauce is plum (yellow or red cherry plum), as well as fresh herbs. Note that it's best to use fresh herbs to make the sauce more flavorful and aromatic. The amount of sugar, salt, and pepper can be adjusted once the sauce is ready. Additionally, you can add a bit of apple cider vinegar or lemon juice for a richer taste. Serve "Tkemali" sauce with meat, poultry, or fish. The prepared sauce can be stored in the refrigerator for several days.

1. Wash the plums, remove the pits, sprinkle the fruits with salt, mix and wait until they release juice. Place the pot on the heat and bring the mixture to a boil.

2. Simmer for five minutes, then add the chopped pepper and cook for another five minutes. Wash and dry the herbs, finely chop them, and add to the sauce.

3. Simmer the sauce for a few more minutes, then add coriander and minced garlic, mix well, and remove from heat. Let the mixture cool slightly, then blend with a blender until it reaches a sour cream-like consistency.
