1. Wash the plums and remove the stems.

2. Place it in water over high heat and bring to a boil. Then reduce the heat to the minimum, cover with a lid, and simmer until soft (20-25 minutes).

3. Strain through a sieve. The pits and pulp can be boiled with added water and sugar and consumed as a compote.

4. Add salt and sugar to the mashed puree. Simmer over low heat for 15 minutes, stirring occasionally.

5. Chop parsley, dill, and cilantro. If you don't like cilantro, use basil instead. Peel and mince garlic. Add it to the puree and mix well.

6. Add pepper. Cook for another 10-15 minutes, remember to stir.

7. Place into sterile jars. Pour vegetable oil on top, enough to cover the sauce. Seal with sterile dry lids. Store the finished sauce in a cool place.
