
Fish sauce
Description
Universal dressing for salads and hot dishes. Instead of boiled egg, you can use raw yolk in this sauce. However, in this case, you must be certain that the eggs are fresh and of high quality. If desired, you can also add a small bunch of dill, which pairs well with fish and makes the dish's aroma even more pleasant. If you'd like to add a spicy note to the sauce, include a bit of coarsely ground black pepper. It's perfect served with pasta, meat, and vegetables.

Put the egg on to boil hard. Prepare the herbs and the pickled cucumber. Wash the onion thoroughly and dry it, then chop it finely. Also chop the pickled cucumber into really small pieces.

Squeeze the juice from a lemon. Now prepare the blender. Into the container where you will make the sauce, pour a tablespoon of the juice, add a little salt, sugar, and, if desired, a tablespoon of sour cream. Beat everything, then add half a yolk and beat again.

Gradually start pouring olive oil into the resulting mixture. Continue whisking the sauce at the lowest speed. The final result should be a not too thick emulsion with a consistency similar to mayonnaise.

Add the chopped cucumber and green onion to the resulting mixture. Mix well and let the sauce stand for at least an hour. Then transfer it to a nice serving dish and serve with fish dishes or appetizers.
