Description

Universal dressing for salads and hot dishes. To make the sauce smooth and homogeneous, be sure to remove the skin from the tomatoes. You can adjust the amount of salt and sugar to your taste. Also, if you prefer a spicier sauce, add more chili pepper. Perfect with pasta, meat, and vegetables.

    Prepare the necessary ingredients.

    Wash the tomatoes, transfer them to a bowl, and pour boiling water over them. Let stand for 15 minutes.

    Prepare the remaining vegetables. Slice the onion into quarter rings. Cut the peppers into thin strips. Mince the garlic.

    After the specified time, remove the skin from the tomatoes and cut them into small pieces.

    In a heavy-bottomed pot, heat the vegetable oil. Add the prepared vegetables: peppers, onion, and garlic. Fry everything together for 7–10 minutes, stirring occasionally.

    After the time has elapsed, add the chopped tomatoes to the sautéed vegetables. Cover with a lid. Simmer over medium heat for 30 minutes.

    Then add the chopped basil, mix well.

    Add salt, sugar, and tomato paste, mix well. Return to heat. Simmer for another 10 minutes, definitely under a lid, as the mixture splatters heavily.

    Remove from heat. Blend with an immersion blender until smooth to form a sauce. Add apple cider vinegar. Return to heat, bring to a boil. Turn off the heat.

    Pour the hot prepared sauce into sterilized glass jars. Seal tightly. Invert the jars, cover with a blanket, and let them cool completely. Then transfer to the storage place for preserves.
