
Barbecue sauce
Description
Minimal ingredients — excellent result. There are many different recipes for preparing sauces for shashlik, but my arsenal includes the number one shashlik sauce. How to make it? Very simple: chop the herbs, add spices and tomato paste — and it's ready. Aromatic meat grilled over charcoal, served with this wonderful tomato sauce, moderately spicy and fragrant, will leave no one indifferent. The sauce is ready. Store it in the refrigerator and serve with dishes.

Finely chop a couple of well-ripened tomatoes (the finer they are cut, the better they will dissolve during cooking). Place them into a small frying pan (or saucepan/sauté pan) and set over heat. Add salt and sugar, put in the chili pepper, and pour in the oil.

The heat should be medium. Simmer the contents of the skillet (or whatever you're cooking in), stirring constantly, for 8–10 minutes. Then add the pasta (it should be of very good quality).

Simmer everything again for another 5-7 minutes. Taste and, if necessary, add salt, sugar, or pepper. Finely chop the cilantro, press the garlic through a garlic press. Add the cilantro and garlic to the sauce. Mix well and remove from heat. Be sure to let it cool before serving.
