Prepare all the ingredients.

Tomatoes need to be peeled. To do this, immerse them in boiling water for two minutes. Then remove the skin.

Cut the tomatoes, onion, and jalapeño pepper into small pieces. Place them in a saucepan, add the canned chili peppers whole, pour in water, and bring to a boil.

The salsa sauce should reach a temperature of 80-85 degrees. Use a thermometer to make sure. Cook it for about 15-20 minutes. You can cook it longer if needed.

Prepare sterilized jars for canning salsa sauce. Pour 1–2 tablespoons of vinegar into each jar. Then fill the jars with hot sauce while both the sauce and jars are hot—temperatures should be nearly the same. Seal the jars and place them into warm water. Let them cool down together with the water. Alternatively, you can simply turn the jars upside down, cover them with a blanket, and let them cool. I recommend opening the first jar no sooner than after three days. Enjoy your winter!
