A delicious addition to everyday and festive dishes. Here is a recipe for a wonderful "Satsivi" sauce based on natural yogurt, cucumber, garlic, and fresh herbs. When preparing the vegetables, it's best to peel the cucumber for a more delicate sauce. You can substitute the yogurt with low-fat sour cream. Olive oil can be omitted. Add garlic according to your taste, but be careful not to overdo it. Grated cucumber goes wonderfully with parsley, cilantro, and any other fresh herbs. Season with salt just before serving (if needed). Perfect served with pasta, meat, and vegetables.

1. Take a large cucumber. Wash it thoroughly. Dry it with a paper towel to remove excess moisture. Then grate it on the large side of a grater. Transfer the grated cucumber to a bowl.

2. Peel the garlic clove. You will need 1 clove per 1 large cucumber. Grate the garlic clove on a fine grater and add it to the bowl with the cucumber.

3. Now mix the ingredients with thick natural yogurt (or sour cream). Add a small amount of olive oil.

4. Prepare the parsley. Wash it thoroughly and pat dry to remove excess moisture. Then finely chop and add to the sauce. If necessary, season with salt and add garlic to taste. The sauce is ready. Serve it with meat dishes, grilled chicken, or boiled potatoes.
