Description
Universal dressing for salads and hot dishes. The name "satsivi" means "sauce" in Georgian. In Georgia, words are typically pronounced with stress on the first syllable, so in the word "satsivi," the stressed syllable is "sa." Satsivi sauce is most commonly made from fruits and berries, though tomatoes are sometimes added as well. This sauce is traditionally used to season poultry dishes, especially chicken and turkey. It's particularly delicious with Georgian dishes such as khinkali, lamb bozbashi, chikhirtma, and tabaka chicken. The sauce also pairs excellently with bean dishes, eggplants, as well as veal, lamb, pork shashlik, and meat sausages. Satsivi can be served either cold or warm and is perfect with pasta, meat, and vegetables.
