Description
Homemade sauce recipe. French cuisine features many simple sauces based on herbs and spices, and this one is no exception. "Ravigote" sauce has a pronounced yet very harmonious flavor and aroma. The sauce turns out quite thick, so when serving it with meat or fish, it's best to add 2-3 tablespoons of the broth in which the meat or fish was cooked. You can use any mustard to your taste; I prefer whole grain. Serve the sauce with meat, fish, or use it as a salad dressing.

Prepare all the necessary ingredients for making "Ravigote" sauce. Wash the herbs and dry them, drain the capers in a sieve and let the liquid drip off.

Peel the onion and finely chop it. Mash the capers with a fork. Place the mustard, onion, and capers into a bowl and mix well.

Remove parsley, tarragon, and chervil from their stems and finely chop. Add to a bowl.

Season with salt and pepper, whisking with a whisk, pour in the vinegar and vegetable oil.

Beat everything well with a whisk, transfer to a sauce bowl, and serve immediately.
