
Tomato sauce for winter storage
Description
Universal dressing for salads and hot dishes. I recommend exactly this basic version. The flavor is mild, and you can always add more spices and heat during winter, depending on your mood and needs. In autumn, time is already limited enough. If desired, you can blend the sauce with an immersion blender until smooth before bottling, bring it to a boil, then seal. The recipe yields three liters of sauce. It's best to store it in jars with a capacity of no more than 800 ml.

Prepare the ingredients.

Place the peeled pepper and onion into the blender bowl.

Pulse in short bursts until crumbly, then transfer to a large, heavy-bottomed pot.

Remove the stems from the tomatoes. Chop the tomatoes coarsely and process in a food processor.

Pour into a saucepan, add salt and sugar.

Bring quickly to a boil and simmer uncovered for half an hour over a steady heat slightly below medium. Stir occasionally. Add the vinegar and cook for another minute.

Remove from heat and immediately pour into sterile, hot, and dry jars. Seal with boiled lids.

You can turn the jars upside down, or you can simply cool them like this and store them in a dark place.
