
Sauce for winter
Description
Perfect for meat, poultry, and side dishes. "Kubansky" sauce is very easy to prepare and tastes similar to ketchup, though slightly milder. You can add it to soups, borscht, shchi, pizza, pasta, and stews. Serve with fried meat, cutlets, or fried fish. If you prefer a completely smooth sauce, press the tomatoes through a sieve. Be sure to taste the sauce and adjust the ingredients to your preference. The specified quantities yield one 750 ml jar and one 500 ml jar. Serve chilled or at room temperature.

Prepare the ingredients for making the sauce.

Place the tomatoes in a saucepan with boiling water, let them sit for one to two minutes, then transfer them to a bowl of cold water. The skin will come off very easily and quickly.

Pass the peeled tomatoes through a meat grinder.

Peel the onion, wash it, and mince it in a meat grinder as well. Add to the tomatoes.

Peel the garlic, chop finely, and add to the sauce as well.

Mix all the sauce ingredients and simmer the tomato with spices and garlic for 15–20 minutes. At the end, add 9% vinegar and mix again.
