    Wash the cucumbers under running water and dry them with paper towels. Peel the cucumbers using a sharp knife or a vegetable peeler.

    Divide the cucumbers into two equal parts. Chop one part with a knife, cutting the cucumbers into small cubes. For the sauce, it's better to use young cucumbers without large seeds.

    Grate the second portion of cucumbers on a medium or fine grater. Peel the garlic cloves, wash them, pass through a garlic press, and add to the grated cucumbers.

    Take the blender bowl and add the grated cucumber mixed with garlic. Then add feta cheese and plain Greek yogurt to the bowl. Blend everything with the blender until smooth.

    While continuously blending the sauce at low speed, slowly drizzle the mustard oil into the blender jar in a thin stream. Then blend again until the sauce becomes smooth and uniform in consistency.

    Add ground pepper and salt to the sauce to taste. Mix everything thoroughly, then add the diced cucumber. Place the finished sauce in the refrigerator for several hours.
