
Sauce from roasted garlic and beans
Description
Universal dressing for salads and hot dishes. A thick, hearty sauce made from roasted garlic and beans turns out delicious, healthy, and low-calorie. To make the sauce creamier, you can add cream cheese or peanut butter.

Step 1

1. Peel the outer skin off the garlic head. Place the rack in the middle position and preheat the oven to 200 degrees. Cut off 6 mm from the top of the garlic head. Place the garlic in foil and drizzle with ½ teaspoon of olive oil. Wrap the garlic in foil and bake in the oven until soft, about 40 minutes.

2. When the roasted garlic has cooled enough to handle, remove the pulp and place it in the bowl of a food processor. Add the sun-dried tomatoes and salt, and blend until smooth. Drain the liquid from the beans and add them to the garlic mixture along with black pepper. Mix well.

3. While the food processor is running, gradually add the balsamic vinegar and oil from the sun-dried tomatoes. Blend until smooth. Add seasonings to taste, if needed, and serve the sauce drizzled with balsamic vinegar.
