Recipe for homemade sauce. In our family, we face the same problem every year: we pickle so many tomatoes in summer that we simply can't finish them before the next season arrives. What to do with leftover pickled tomatoes? There's a solution—make sauce from pickled tomatoes. It's very easy to prepare, ready in just minutes. And you can use it in many different ways. This homemade sauce will beat store-bought ketchup by ten points :) Here's the recipe for sauce from pickled tomatoes: 1. Heat oil in a large saucepan. Add finely chopped onion and garlic. Sauté over medium heat for about two minutes, season with salt and pepper to taste. 2. Add slightly crushed (by knife, fork, or blender) pickled tomatoes and dried herbs (I used basil and coriander). Bring the sauce to a boil. 3. As soon as the sauce starts boiling, immediately reduce the heat and continue cooking over low heat. Simmer for about one hour, or longer if needed, until the sauce reaches your desired consistency. At the very end, if you like, stir in a little grated cheese. This pickled tomato sauce goes perfectly with pasta, noodles, meat, and vegetables.
