
Pepper sauce for winter
Description
Homemade sauce is easy and quick to prepare. You can also add a couple of tablespoons of this sauce to borscht—believe me, you'll definitely get fresh summer notes. All dishes acquire a pleasant taste with this sauce. You can make the sauce slightly sweet, as in our version, or prepare it spicy by adding, for example, some chili. Be sure to make a batch in advance—I think the result will pleasantly surprise you. The sauce is ready. Store it in the refrigerator and serve with dishes.

Prepare the ingredients, and also take a 0.5-liter jar or three 0.2-liter jars. If you have leftover sauce, you'll be able to taste it right away. Wash the peppers thoroughly and dry them well.

Remove the seeds from the peppers and discard the stems. Cut the peppers into small, irregular cubes or strips.

Place the peppers in a pot, add water, salt, sugar, spices, and a couple of garlic cloves.

Simmer the peppers for 40 minutes over low heat.

After some time, transfer the contents of the pot to a blender jar and blend at high speed. If you want a smooth, homogeneous sauce, strain it through a sieve.

Transfer the sauce from the bowl to a saucepan, be sure to taste it and adjust the flavor. Cook the sauce for 10 minutes, adding vinegar at the end of cooking.

Transfer the sauce into sterile jars.

Seal the jars with lids, turn them upside down, cover with a blanket, and leave undisturbed for 24 hours. After 24 hours, transfer the sauce to the pantry.
