
Chanterelle sauce
Description

This thick, aromatic sauce is the perfect accompaniment to meat dishes, pasta, or potato sides. Tender chanterelles and sweet onions are sautéed until golden, then simmered with cream and a small amount of flour, giving the sauce a wonderfully creamy texture. Instead of fresh mushrooms, you can use frozen ones or buy them at the store. Simple to make and incredibly delicious, this sauce will become your favorite addition to any dish. The finished sauce can be stored in the refrigerator for several days.

Prepare all the necessary ingredients for making chanterelle sauce.

Sort through the chanterelles, cut off any dirty spots and roots, rinse them, and let all the water drain completely. Cut the mushrooms into pieces.

Peel the onion, rinse it, and finely chop. Place the butter in a frying pan and melt over medium heat. Add the onion and sauté for 5-6 minutes until soft.

Add the prepared mushrooms, mix well.

Sauté the chanterelles over medium heat until the water evaporates and the mushrooms are slightly browned. This will take approximately 10–15 minutes.

Pour the cream into the pan with the mushrooms.

Season with salt and pepper, then mix well.

Mix the flour with cold water and stir until smooth. While stirring the sauce, gradually add the flour mixture and cook over low heat until thickened. Remove the pan with the chanterelle sauce from the heat. Serve the sauce hot.
