Prepare all the ingredients. Wash the gooseberries thoroughly and remove the stems.

Add vinegar, sugar, cinnamon, and other spices to a saucepan and bring the mixture to a boil.

Next, add the cleaned gooseberries, raisins thoroughly rinsed in boiling water, diced apple, and onion to the pot. Cover with a lid and simmer over medium heat for several minutes.

Then remove the lid and continue simmering the sauce over the same medium heat, stirring occasionally, until thickened. Cook for about 35–40 minutes. At the end, you can add sugar if it's too sour, or vinegar if it's too sweet.
