
Sour plum sauce
Description
Recipe for homemade sauce. I make this sour plum sauce at home once a year, but then enjoy it all year round, serving it occasionally with meat or chicken. This sauce has a very rich flavor, combining sweet, sour, salty, and spicy elements—typical of Chinese cuisine! Therefore, I don't recommend serving this sauce with fish or turkey; it pairs perfectly with red meat, though.

1. The recipe is extremely simple – remove the pits from all the plums and put them into a heavy-bottomed pot. Add sugar, crushed garlic, grated ginger, pieces of apple, pepper, and onion. Pour in wine and soy sauce, and add some water. Place over low heat.

2. Bring to a boil, blend in a blender, and bring to a boil once again. Boil for about 5-10 minutes, until the sauce reaches your desired consistency.

3. Pour into prepared clean jars, seal with sterile lids for winter storage. Keep the jars upside down under a blanket until completely cooled. Then store in a cellar or basement.
