
Yogurt and cucumber sauce
Description
Recipe for homemade sauce. In our family, a yogurt and cucumber sauce is a traditional accompaniment to dishes we prepare on the barbecue or grill. Grilled meat and roasted vegetables pair wonderfully with this sauce. I know a very similar sauce exists in Greek cuisine called tzatziki (or tzatziki—the transliteration varies), but this yogurt and cucumber sauce is similar yet slightly different. It's perfect served with pasta, meat, and vegetables.

Peel the cucumber.

Dice the cucumber into small cubes.

Place the cucumbers in a bowl and sprinkle with salt. Let sit for 10 minutes. During this time, the cucumbers will release excess liquid due to the salt, which should then be drained off.

Grind the cumin seeds in a mortar.

In a small bowl, place the yogurt and cumin.

Add a little grated lemon zest and lemon juice as well.

Add the garlic there as well.

Finally, add cayenne pepper and olive oil to the bowl.

Mix very thoroughly so that all ingredients blend evenly.
