
Lamb sauce with potatoes

As the saying goes, all genius is simple—and this recipe is no exception. We won't need many ingredients, yet the dish turns out absolutely delicious. I've never met a single person who would refuse such a sauce; all my family and friends, whenever they come to visit, enjoy it immensely. Step 1

First, we rinse the lamb and cut it into 2 cm cubes. Place the meat on a paper towel to dry. Put a frying pan on high heat and heat the vegetable oil in it. Sear the lamb over high heat (the meat should lie in a single layer) until a golden crust forms.

Transfer the fried meat to a saucepan. Pour half a cup of boiling water into the frying pan and, using a wooden spatula, dissolve all the remaining juices and residue from frying in the water. Pour this mixture into the saucepan and add more boiling water, bringing the total liquid volume to about 1 liter. Simmer the lamb over low heat for 15–20 minutes.

Next, we peel the potatoes and slice them into pieces as if for frying.

Transfer the sliced potatoes to the pot with the meat.

If necessary, add a little water; the total amount of liquid should be enough to be visible through the potatoes, but not rise above them.

Mix the meat and potatoes and bring the liquid to a boil. Cover the pot with a lid and place it in a preheated oven at 180 degrees for one hour, stirring the contents a couple of times during cooking.

Towards the end of the stewing process, we peel the onion and chop it finely.

Melt the butter in a frying pan.

And sauté the onion on it until golden.

Now carefully remove the pot from the oven and add the fried onion, bay leaf, spices, and salt to taste. Return the pot to the oven for another 5–10 minutes. Then take it out again and sprinkle the meat and potatoes with chopped parsley. Place the pot into the turned-off oven for 20 minutes to let the dish rest.
