Description

A universal dressing for salads and hot dishes. I suggest slightly modifying the traditional recipe by adding a bit of soy sauce to the sauce for meatballs—instead of the usual bland "kindergarten-style" gravy, you'll get an exquisite delicacy with a subtle Asian twist. Spices are a matter of personal preference, but I find bay leaf, basil, coriander, and oregano the most suitable for this sauce. Fresh parsley also works perfectly well. Ideal for pasta, meat, and vegetables.

    First, peel and finely chop the onion.

    Chop the garlic with a knife—not too finely.

    In a skillet with heated vegetable oil, sauté the onion and garlic until lightly golden.

    Mix the soy sauce with salt and spices.

    Add tomato paste.

    And we'll add this mixture to the pan with the onion and garlic. We'll sauté it, stirring constantly, for just about 2 minutes, then add the chopped tomatoes (whether or not to peel them is up to you—I personally sometimes leave the skins on).

    Bring the resulting sauce to a boil; if it turns out too thick, add a little water. The same goes for salt, spices, and sugar.

    That's it - the sauce is ready! You can now add the meatballs and simmer them; in 15-20 minutes, a delicious and attractive dish will be on your table.
