
Asparagus sauce
Description
Universal dressing for salads and hot dishes. The recipe for asparagus sauce cannot be called simple, as it requires attention and constant monitoring; however, in reality, there is nothing complicated about it. 1. First, melt the butter. It should not boil, so it's better to melt it slightly, then, stirring constantly, bring it to a smooth consistency. 2. Place a saucepan with water on the stove and prepare a bowl for a double boiler. 3. Beat the egg yolks (it's better to take them out of the refrigerator beforehand so they reach room temperature) in a bowl and thoroughly mix with a pinch of salt. Add a little pepper if desired. 4. Squeeze juice from the lemon and add it to the yolks, continuing to stir. 5. The key feature of this sauce is that it must be stirred continuously. Combine the yolks with the fully melted butter and, while continuing to whisk, place the bowl over the double boiler. 6. Cooking over the double boiler will take about 15 minutes. The asparagus sauce should thicken and slightly reduce. During this entire time, it must be stirred constantly. Serve this sauce best on a slightly warmed plate.
