
Tomato and eggplant barbecue sauce
Description
I suggest using onions, peppers, and garlic in addition to eggplants and tomatoes. For flavor, add a little tomato sauce, spices, and sugar. This sauce goes well with meat or poultry kebabs. Take note and enjoy cooking!

Prepare the ingredients.

Rinse the eggplant and dry it, then slice it into rounds.

Rinse the tomato and cut it into random pieces. Cut the onion into large pieces. Clean the pepper and cut it into 4 parts.

Place all prepared ingredients in a baking dish, add butter and garlic. Bake in the oven at 200 degrees for 30-35 minutes.

After some time, remove the vegetables and stir, then check for doneness. If necessary, bake for another 10 minutes.

Transfer the vegetables to the bowl of a kitchen blender along with the peeled garlic. Add salt, pepper, a little sugar, and tomato sauce. Blend at high speed until smooth. Taste and adjust the seasoning as needed.
