
Pizza sauce for winter

Prepare all the ingredients.

Make crosswise cuts on the tomatoes and immerse them in boiling water for 5 minutes.

Then rinse them under cold water and peel off the skin. Cut the tomatoes into cubes, removing the stems.

Wash the bell pepper, remove the seeds and stem, and cut into small slices. Peel the garlic. Cut the onion into medium-sized cubes.

Pass all the prepared vegetables through a meat grinder or blend with a blender. Transfer the resulting mixture to a large saucepan. Bring to a boil and simmer over medium heat for about 30–40 minutes. The liquid should evaporate, so do not cover the saucepan with a lid.

Then strain the mixture through a sieve.

Then simmer the sauce over low heat until it noticeably thickens and reduces in volume by three times. Stir constantly.

Add sugar, salt, olive oil, and all the spices. Cook for another 10 minutes. At the end, pour in the apple cider vinegar. Simmer the sauce for another 2-3 minutes.

Fill the hot sauce into clean sterilized jars. Seal them immediately. After cooling, store in a cool place.
