
Manty sauce
Description
This sauce for mantu is easy to prepare at home. In traditional cuisine, it's called "Santan" and served with mantu. A piece is bitten off the mantu, and this spicy oil is poured inside. Try it—it really enhances the flavor of mantu. Serve the sauce with meat, fish, or use it as a salad dressing.

1. Dry-fry the paprika and chili pepper in a pan. Keep frying until a pleasant aroma develops, but don't overdo it: burnt pepper will spoil the taste.

2. Transfer the pepper to a bowl. Add the tomato paste and minced garlic. Mix thoroughly.

3. Now heat the oil in a pan until it starts to bubble. Pour it all at once into the sauce and mix. Keep covered until completely cooled.

4. The sauce is ready! You need to stir it every time to bring the filling up from the bottom, but it's still worth it: delicious and moderately spicy!
