
Simple pasta sauce
Description
The recipe won't take much time. You can make the sauce in advance and store it in the refrigerator, or reduce the ingredient quantities for just a few servings. I use fresh tomatoes for this sauce, which perfectly preserve and convey the flavor of ripe tomatoes. You can make a spicy version by adding garlic, chili pepper, as well as spices and herbs. Serve hot.

Wash the tomatoes, cut half into pieces and put them into a saucepan, cover with a lid and cook for 10 minutes after boiling.

Chop the remaining tomatoes into pieces and pass them through a meat grinder. Then rub the resulting mass through a sieve to remove seeds and skin.

Pour the resulting mixture into several heat-resistant dishes in a thin layer and bake in a preheated oven at 135 degrees for about 2 hours, checking the mixture every 15 minutes.

Pass the cooked tomatoes through a sieve, removing the seeds and skin.

In a saucepan, heat the olive oil and add the garlic, onion, and basil (whole).

Pour the boiled and baked tomato purée into the pot with the oil, bring the mixture to a boil, season with salt, and cook for 20–30 minutes.

Remove the basil, garlic, and onion, cover the sauce, and let it steep for 5 minutes. Use the sauce immediately or cool it and store in the refrigerator.
