1. Pour a little olive oil into a frying pan and heat.

2. Meanwhile, peel the garlic, chop it finely, and place it in the frying pan. Lightly sauté, stirring constantly, to prevent the garlic from burning.

3. Wash the tomatoes, make small cuts, and pour boiling water over them. Then cool them down: this will make it easy to peel off the skin. Chop them finely and place in a frying pan. It is also convenient to use canned tomatoes in their own juice.

4. After 2-3 minutes, add salt, pepper, and dried herbs. You can also add a pinch of sugar if the tomatoes are slightly sour.

5. Pour in the wine and gently stir. Using alcohol is optional, but the grape flavor note adds a special piquancy. By the way, the alcohol will evaporate during cooking.

6. Cover the sauce with a lid, reduce the heat to minimum (you can even use a heat diffuser), and let it simmer for about 20 minutes.
