Hinkali sauce
Description
The recipe won't take much time. Traditionally, hinkali are served simply sprinkled with black pepper, but if you're not satisfied with this classic version, I can tell you more. Serve hot.
Instructions

Step 1

So, let's begin. First, we need to peel the garlic. You can add more or less garlic to the sauce, depending on how spicy you want it to be.
- 2
Step 2

Now we need to blanch the tomato. To do this, make a cross-shaped incision on the top of the tomato and immerse it in boiling water for half a minute. After this procedure, the tomato skin should come off very easily—remove it.
- 3
Step 3

After removing the skin, cut the tomato flesh into small cubes.
- 4
Step 4

Place the sliced tomato in a pan and simmer until soft, then mash the mixture with a masher.
- 5
Step 5

In another skillet, add a little vegetable oil and heat it. Place the minced garlic into the hot oil and fry until the characteristic garlic aroma appears.
- 6
Step 6

Add tomato paste to the fried garlic, mix everything and simmer over low heat for a couple of minutes.
- 7
Step 7

Then add the chopped tomato to the pan, mix everything again, and simmer the sauce for another 2-3 minutes.
- 8
Step 8

Transfer the resulting mixture to a bowl and dilute it with meat broth. Add ground pepper, salt, and sugar to taste, and mix well. To the prepared sauce, add another minced clove of fresh garlic.

Step 9

Serve the sauce in a bowl, garnished with fresh herbs. By the way, this sauce can also be used for serving meat, pasta, dumplings, and many other dishes. Enjoy your meal!
