1. Cut off the stems from the peppers. Do not remove the pepper seeds. Peel the garlic and separate into cloves. Cut the peppers and garlic into pieces. Place in a blender and puree into a smooth paste.

2. Transfer the prepared puree to a saucepan. Add salt, sugar, oil, and vinegar to the pepper-garlic mixture. Use wine or apple vinegar. If you want a thicker sauce, add some starch. Place the saucepan over low heat and cook until it comes to a boil.

3. As soon as the sauce comes to a boil, remove the pot from the heat and cool the sauce by placing it on ice. The sauce is ready. Be careful not to burn yourself. It's an excellent accompaniment to fried, baked, or even boiled meat.
