Sauce
Description
A delicious addition to everyday and festive dishes. Caesar salad is quite simple to prepare, yet making it at home as tasty as in a restaurant is rather difficult. The key secret lies in the Caesar salad dressing, which makes the salad so delicious and therefore popular. Well, let me reveal the secret and tell you how restaurant chefs prepare the dressing for Caesar salad (it's more accurate to call it a dressing, since from a culinary standpoint, a sauce is something different). If you follow this recipe, the Caesar salad will turn out superb, thanks to the homemade dressing. Good luck! :) Serve the dressing with meat, fish, or use it as a salad dressing.
Instructions
- 1
Step 1

For clarity, I'm showing the ingredients needed to prepare the sauce.
- 2
Step 2

Take a deep bowl in which we will prepare the sauce. Put the anchovies into it.
- 3
Step 3

Using the back of a spoon or fork, mash the anchovies into a paste.
- 4
Step 4

Add the minced garlic (I pass it through a press) and 2 egg yolks.
- 5
Step 5

Add lemon juice and mustard.
- 6
Step 6

Add vinegar (I used balsamic, but any edible vinegar will work) and whisk everything with a whisk until smooth.
- 7
Step 7

Gradually start adding the oil in a thin stream, continuing to whisk.
- 8
Step 8

It's better to add olive oil in portions rather than all at once. Add part of the oil, blend until smooth, and if the sauce hasn't reached the desired consistency, add more oil.
- 9
Step 9

Add the oil in a thin stream, continuing to whisk, until the sauce reaches the desired consistency.
- 10
Step 10

So, let's say the sauce has reached the desired consistency. Stop whisking.
- 11
Step 11

Add salt, pepper, and cheese. Mix well.
- 12
Step 12

The sauce is ready. All that's left is to chill it (I put it in the refrigerator for at least half an hour), and then you can use it to dress your Caesar salad. :)
